- 1 cup unsalted butter, at room temperature
- 3/4 cup sugar
- 1 large egg
- 1/4 cup fresh squeezed lemon juice
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup diced fresh strawberries
- 1 cup powdered sugar, sifted
- 1 Tbsp strawberry puree (from about 2 large strawberries)
- About 1 Tbsp lemon juice, to thin the glaze
Instructions
- Preheat your oven to 350°F. Line a 9-inch square baking pan with parchment paper, leaving long edges to help lift out the bars later. Set aside.
- In a large bowl, cream together the softened butter and sugar until fluffy using a hand mixer or sturdy spatula.
- Beat in the egg until smooth. Add the lemon juice and mix—it’s okay if the mixture looks slightly curdled.
- In a separate bowl, whisk together the flour, baking powder, and salt. Stir into the wet ingredients until no dry streaks remain.
- Gently fold in the diced strawberries. The dough will be thick and sticky.
- Spread the dough evenly into the prepared pan using an offset spatula or spoon.
- Bake for 30–35 minutes, or until edges are golden and the center is just set. A toothpick should come out with moist crumbs.
- Cool completely on a rack before glazing.
- Puree 2 large strawberries and strain to get 1 Tbsp of smooth puree. Whisk together with sifted powdered sugar and lemon juice to make the glaze.
- Spread glaze over cooled blondies. Let set for 15–20 minutes, then slice into squares.
