- 1 1/2 cups rolled oats
- 1 cup raw cashews
- 1/2 cup creamy cashew butter
- 1/4 cup pure maple syrup
- 1/4 cup Medjool dates, pitted (about 3-4)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup freeze-dried strawberries, crushed
Instructions
- In a food processor, combine the rolled oats, raw cashews, creamy cashew butter, maple syrup, Medjool dates, vanilla extract, and salt.
- Process until the mixture is well combined and sticky.
- Add the crushed freeze-dried strawberries and pulse a few times to incorporate.
- Using your hands, form the mixture into small bite-sized balls.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
