A refreshing and delicious Lemon Pretzel Dessert that combines a crunchy pretzel crust with a creamy lemon filling, perfect for summer gatherings.


Ingredients

  • 2¾ cups crushed pretzels (2 ½ cups for crust, ¼ cup for garnish)
  • 1¼ cups granulated sugar (½ cup for crust, ¾ cup for cream cheese filling)
  • ¾ cup salted butter, melted and cooled
  • 12 ounces cream cheese, softened
  • 16 ounces (2 8-ounce) containers whipped topping (12 ounces for filling, 4 ounces for garnish)
  • 1 medium size lemon, thinly sliced into 12 slices (optional garnish)
  • 22 ounces lemon pie filling (e.g., Lucky Leaf brand)

Instructions

  1. Preheat the oven to 350°F. Lightly spray a 9×13 baking dish with nonstick cooking spray.
  2. Add 2 ½ cups of the crushed pretzels to a medium size mixing bowl.
  3. Add the ½ cup granulated sugar to the pretzels.
  4. Pour the ¾ cup melted and cooled butter over the pretzels and sugar. Stir to completely coat and combine.
  5. Press the buttered pretzels into the bottom of the sprayed baking dish. Bake for 10 minutes. Remove from the oven and allow the crust to cool completely.
  6. Using a stand mixer or a handheld mixer, beat the softened cream cheese for 1-1 ½ minutes until smooth.
  7. Add the remaining granulated sugar and continue mixing for another 2 minutes or until well incorporated.
  8. Gently fold in the 12 ounces of whipped topping using a silicone spatula.
  9. Evenly spread the cream cheese filling over the cooled pretzel crust.
  10. Spread the lemon pie filling over the cream cheese layer. Cover with aluminum foil and chill in the refrigerator for 4 hours (or overnight).
  11. Just before serving, cut into 3 slices x 4 slices.
  12. Add the remaining whipped topping to a piping bag or ziplock bag and make small dollops on top. Sprinkle the ¼ cup of crushed pretzels over the dessert and add halved lemon slices if desired.
