- 2 1/3 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 3/4 teaspoon salt
- 1/4 teaspoon baking powder
- 12 tablespoons unsalted butter, melted and cooled
- 1 (14 oz) can sweetened condensed milk
- 4 large egg yolks, room temperature
- 2 tablespoons heavy cream
- 1/8 teaspoon salt
- 2/3 cup fresh lemon juice (about 4–5 lemons)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine flour, granulated sugar, brown sugar, salt, and baking powder.
- Add melted butter to the dry ingredients and mix until crumbly.
- Press the crumb mixture into the bottom of a greased baking dish to form the crust.
- Bake the crust for 15-20 minutes or until lightly golden.
- In another bowl, whisk together sweetened condensed milk, egg yolks, heavy cream, salt, and lemon juice until smooth.
- Pour the lemon filling over the baked crust.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow to cool completely before cutting into bars.
- Serve chilled or at room temperature.
Notes
- For a stronger lemon flavor, add more lemon juice or zest.
- These bars can be stored in the refrigerator for up to a week.
- Dust with powdered sugar before serving for an elegant touch.
