  • 2½ cups shredded carrots
  • 3 eggs
  • ¾ cup vegetable oil
  • ¼ cup milk
  • 1 tsp vanilla extract
  • ¾ cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice.
  3. Add the shredded carrots, eggs, vegetable oil, milk, and vanilla extract to the dry ingredients and mix until well combined.
  4. Fold in the chopped walnuts.
  5. Pour the batter into a greased loaf pan.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
