- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 ½ tsp baking soda
- 1 ½ tsp cinnamon
- 1 tsp salt
- ½ tsp pumpkin pie spice
- 2½ cups shredded carrots
- 3 eggs
- ¾ cup vegetable oil
- ¼ cup milk
- 1 tsp vanilla extract
- ¾ cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice.
- Add the shredded carrots, eggs, vegetable oil, milk, and vanilla extract to the dry ingredients and mix until well combined.
- Fold in the chopped walnuts.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, you can include raisins or other nuts.
- Store the bread in an airtight container to keep it fresh.
- This bread can be frozen for up to 3 months.
