  • 1 cup minimum 2% fat Greek yogurt, plain and unsweetened
  • 1 whole egg
  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the Greek yogurt and egg to the mashed bananas and mix well.
  4. In another bowl, combine oat flour, almond flour, maple syrup, vanilla extract, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let it cool before slicing and serving.
