Ingredients

- 2 ripe bananas
- 1 cup minimum 2% fat Greek yogurt, plain and unsweetened
- 1 whole egg
- 1 cup oat flour
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the Greek yogurt and egg to the mashed bananas and mix well.
- In another bowl, combine oat flour, almond flour, maple syrup, vanilla extract, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool before slicing and serving.
Notes
- Use ripe bananas with brown spots for the best flavor.
- For a gluten-free option, ensure the oat flour is certified gluten-free.
- Store leftovers in an airtight container for up to 3 days.
