Description

Ingredients

  • ¼ cup olive oil, or avocado oil
  • 2 lemons, juiced
  • 1 tablespoon honey
  • ½ tablespoon lemon zest
  • 1 garlic clove, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Kosher salt, to taste
  • Kosher pepper, to taste
  • 1 ½ cups quinoa, uncooked
  • 4 chicken breasts, boneless, skinless
  • 1 English cucumber, diced
  • 4 Roma tomatoes, chopped
  • 1 red onion, medium, diced
  • 1 cup feta cheese, crumbled
  • 1 cup kalamata olives, pitted

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, honey, lemon zest, garlic, oregano, basil, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes.
  3. While the chicken is marinating, rinse the quinoa under cold water and cook according to package instructions.
  4. Preheat the grill or a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  5. Once the chicken is cooked, let it rest for a few minutes before slicing it.
  6. In serving bowls, layer the cooked quinoa, diced cucumber, chopped tomatoes, diced red onion, crumbled feta cheese, and kalamata olives.
  7. Top the bowls with sliced chicken and drizzle with any remaining marinade if desired.
