Description

Ingredients

  • 2 (15 oz) cans whole kernel corn, drained
  • 1 red bell pepper, finely diced
  • 2 cups shredded Mexican blend cheese
  • 1 cup mayonnaise (light mayo can be used)
  • 1/4 teaspoon black pepper
  • 1 (9.25 oz) bag Chili Cheese Fritos, lightly crushed
  • Fresh cilantro, for garnish

Instructions

  • Mix the Base: In a large mixing bowl, combine the drained corn, red bell pepper, shredded cheese, mayonnaise, and black pepper. Stir until evenly mixed.

  • Add the Crunch: Just before serving, gently fold in the lightly crushed Chili Cheese Fritos.

  • Chill: Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.

 

  • Garnish & Serve: Before serving, give the salad a gentle stir and top with chopped fresh cilantro. Serve chilled.
