- 2 (15 oz) cans whole kernel corn, drained
- 1 red bell pepper, finely diced
- 2 cups shredded Mexican blend cheese
- 1 cup mayonnaise (light mayo can be used)

- 1 (9.25 oz) bag Chili Cheese Fritos, lightly crushed
- Fresh cilantro, for garnish
