Description

These no-bake Oreo Cheesecake Bars are a summer party must! Featuring a festive red crust, a rich and creamy cheesecake filling loaded with Oreo cookies, and topped with sprinkles and optional pop rocks, this dessert is perfect for everything from Memorial Day to the Fourth of July.


Ingredients

  • 25 Golden Oreos, crushed (regular or red velvet Oreos can also be used)
  • 6 tbsp butter, melted
  • Red gel food coloring, no-taste (optional)
  • 32 oz cream cheese blocks, room temperature (4 blocks)
  • 3/4 cup powdered sugar (adjust to taste)
  • 1 tsp vanilla extract
  • 8 oz Cool Whip (extra creamy preferred)
  • 16 Oreo cookies, roughly chopped (Fireworks Oreos if available)
  • 1 package red or blue pop rocks (optional)
  • Additional chopped cookies for topping
  • Red, white, and blue sprinkles or candies
  • Extra pop rocks for topping (optional)

Instructions

  1. Add the cookies to a food processor and pulse until fine. If using a rolling pin, place cookies in a zip-top bag and crush thoroughly.
  2. Melt butter in 30-second bursts in the microwave until fully melted.
  3. In a bowl, mix the cookie crumbs and butter. Add red gel food coloring if using and stir to combine.
  4. Press the mixture into a parchment- or foil-lined 9×13-inch baking dish. Flatten with a spoon or your hands.
  5. Freeze the crust for 15–30 minutes while preparing the filling.
  6. In a large bowl, beat softened cream cheese until smooth using a hand or stand mixer.
  7. Add powdered sugar and vanilla. Mix until well blended and creamy.
  8. Fold in Cool Whip gently with a spatula until fully incorporated.
  9. Stir in chopped Oreo cookies and optional pop rocks, keeping the mixture light and airy.
  10. Spoon the filling onto the chilled crust and spread evenly.
  11. Top with additional cookies, sprinkles, candies, and pop rocks as desired.
  12. Refrigerate for at least 4 hours or overnight to allow the filling to set properly.
  13. Once firm, slice into bars using a sharp knife wiped clean between cuts for best results. Serve cold.

  • For best results, use full-fat cream cheese and let it fully soften before mixing.
  • Red gel food coloring is optional but gives the crust a fun patriotic twist.
  • Pop rocks should be added just before serving to preserve their fizz.
  • Bars store well in the fridge for up to 5 days in an airtight container.
