- 3 cups rolled oats (2.75 cups oat flour)
- 3 large bananas
- 0.25 cup Unsweetened Vanilla Almond Milk
- ⅓ cup maple syrup
- 2 eggs
- 2 teaspoon cinnamon
- ⅛ teaspoon salt
- ¾ teaspoon baking soda
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, blend the rolled oats until they reach a flour-like consistency.
- In a large bowl, mash the bananas until smooth.
- Add the almond milk, maple syrup, and eggs to the mashed bananas and mix well.
- In another bowl, combine the oat flour, cinnamon, salt, baking soda, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool before slicing and serving.
Notes
- For a sweeter bread, add more maple syrup.
- Store leftovers in an airtight container for up to 3 days.
- This recipe can be made vegan by substituting eggs with flax eggs.
