Ingredients

  • 3 cups rolled oats (2.75 cups oat flour)
  • 3 large bananas
  • 0.25 cup Unsweetened Vanilla Almond Milk
  • ⅓ cup maple syrup
  • 2 eggs
  • 2 teaspoon cinnamon
  • ⅛ teaspoon salt
  • ¾ teaspoon baking soda
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, blend the rolled oats until they reach a flour-like consistency.
  3. In a large bowl, mash the bananas until smooth.
  4. Add the almond milk, maple syrup, and eggs to the mashed bananas and mix well.
  5. In another bowl, combine the oat flour, cinnamon, salt, baking soda, and baking powder.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool before slicing and serving.

Notes

  • For a sweeter bread, add more maple syrup.
  • Store leftovers in an airtight container for up to 3 days.
  • This recipe can be made vegan by substituting eggs with flax eggs.
