- 1 box (16 oz) rotini pasta
- 1/3 cup dill pickle juice (from the pickle jar)
- 2 cups chopped baby dill pickles
- 1 block (8 oz) Colby Jack cheese, cubed small
- 1 small white onion, finely chopped
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/3 cup dill pickle juice (from the pickle jar)
- 2 tablespoons chopped fresh dill
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Bring a large pot of salted water to a boil. Cook rotini according to package instructions until al dente. Drain and rinse under cold water.
- Place the cooled pasta in a large bowl and pour 1/3 cup of pickle juice over it. Toss gently and let sit while you prep the other ingredients.
- Chop the baby dill pickles, cube the Colby Jack cheese, and finely dice the white onion.
- In a separate bowl, whisk together mayonnaise, sour cream, another 1/3 cup pickle juice, chopped fresh dill, salt, and pepper.
- Add the chopped pickles, cheese, and onion to the bowl with the pasta. Pour the creamy dill dressing over the top and toss until evenly coated.
- Cover and refrigerate for at least 1 hour before serving. Stir before serving and garnish with additional dill if desired.
Notes
- Use full-fat mayo and sour cream for the creamiest texture.
- Finely dice the onion so it blends into the salad without overwhelming.
- Letting the salad chill helps the flavors meld and intensify.
