Description

This creamy, tangy Dill Pickle Pasta Salad is a pickle lover’s dream! Made with crisp dill pickles, Colby Jack cheese, and a rich homemade dill dressing, it’s the perfect make-ahead dish for summer picnics, potlucks, or easy dinners.


Ingredients

  • 1 box (16 oz) rotini pasta
  • 1/3 cup dill pickle juice (from the pickle jar)
  • 2 cups chopped baby dill pickles
  • 1 block (8 oz) Colby Jack cheese, cubed small
  • 1 small white onion, finely chopped
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/3 cup dill pickle juice (from the pickle jar)
  • 2 tablespoons chopped fresh dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook rotini according to package instructions until al dente. Drain and rinse under cold water.
  2. Place the cooled pasta in a large bowl and pour 1/3 cup of pickle juice over it. Toss gently and let sit while you prep the other ingredients.
  3. Chop the baby dill pickles, cube the Colby Jack cheese, and finely dice the white onion.
  4. In a separate bowl, whisk together mayonnaise, sour cream, another 1/3 cup pickle juice, chopped fresh dill, salt, and pepper.
  5. Add the chopped pickles, cheese, and onion to the bowl with the pasta. Pour the creamy dill dressing over the top and toss until evenly coated.
  6. Cover and refrigerate for at least 1 hour before serving. Stir before serving and garnish with additional dill if desired.

  • Use full-fat mayo and sour cream for the creamiest texture.
  • Finely dice the onion so it blends into the salad without overwhelming.
