  • 2 tablespoons rice vinegar
  • 2 tablespoons peanut butter
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried red chili flakes
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large bowl, combine the sliced cucumbers and salt. Let them sit for about 10 minutes to draw out excess moisture.
  2. In a separate bowl, whisk together the soy sauce, rice vinegar, peanut butter, honey, minced garlic, chili flakes, and black pepper until smooth.
  3. Drain the cucumbers and pat them dry with a paper towel.
  4. Add the cucumbers to the bowl with the peanut sauce and toss to coat evenly.
  5. Sprinkle the toasted peanuts and chopped parsley on top before serving.
