Ingredients
– 1 lb lean ground beef, browned and drained
– 3 tablespoons taco seasoning
– 1 (10 oz) can Ro-Tel Diced Tomatoes and Green Chiles, drained
– 1 ½ cups sharp cheddar cheese, shredded (or Mexican blend)
– 24 wonton wrappers
Instructions
1. Preheat Oven:
– Preheat your oven to 375°F (190°C). Lightly grease a muffin tin.
2. Cook the Beef:
– In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then stir in taco seasoning and Ro-Tel tomatoes. Simmer for 2-3 minutes, then remove from heat.
3. Assemble the Cups:
– Place a wonton wrapper into each muffin cup, pressing it down gently to form a cup shape. Add a spoonful of the beef mixture into each cup, then sprinkle shredded cheese on top.
4. Bake:
– Bake in the preheated oven for 10-12 minutes, or until the wonton wrappers are golden and crispy and the cheese is melted.
5. Serve:
– Carefully remove the taco cups from the muffin tin and serve warm. Garnish with optional toppings like sour cream, diced tomatoes, or chopped cilantro if desired.
