A delicious and easy recipe for Cinnamon Swirl Banana Oat Bread that is gluten-free and dairy-free, perfect for breakfast or a snack.

- 1/4 cup coconut oil (melted, room temperature) or butter
- 1 cup ripe banana, mashed
- 1/2 cup almond milk (or other milk of choice)
- 1 tsp vanilla
- 2 eggs
- 1 3/4 cup oat flour (certified gluten-free)
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup sugar (for cinnamon swirl)
- 1 tsp cinnamon (for cinnamon swirl)
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together the melted coconut oil (or butter), mashed banana, almond milk, vanilla, and eggs until well combined.
- In another bowl, whisk together the oat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- In a small bowl, mix together the sugar and cinnamon for the swirl.
- Pour half of the batter into the prepared loaf pan, sprinkle half of the cinnamon sugar mixture on top, then add the remaining batter and top with the remaining cinnamon sugar mixture.
- Use a knife to swirl the batter gently.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to use certified gluten-free oat flour if you are strictly avoiding gluten.
- This bread can be stored in an airtight container for up to 3 days at room temperature or in the refrigerator for up to a week.
- For added flavor, consider adding chopped nuts or chocolate chips to the batter.
