- 2 overripe bananas, mashed

- Crumb Topping:
- 1/2 cup powdered sugar
- 1/2 cup all-purpose flour
- 4 tablespoons unsalted butter, melted
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Mix the Wet Ingredients: In a large bowl, beat together the sugar, egg, and vanilla until smooth. Add the softened butter and beat until creamy. Mix in the mashed bananas and buttermilk.
- Whisk the Dry Ingredients: In a separate bowl, stir together the flour, salt, baking soda, baking powder, and cinnamon.
- Combine: Gently stir the dry mixture into the wet ingredients until just combined. Do not overmix.
- Prepare the Pan: Spray a loaf pan with non-stick spray. Pour in the batter, leaving 1 to 2 inches of space from the top.
- Make the Crumble: In a small bowl, mix powdered sugar, flour, cinnamon, salt, and melted butter. Crumble with your hands and sprinkle over the batter.
- Bake: Bake at 350°F (175°C) for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Slice: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
Notes
- Use bananas with lots of brown spots for the richest flavor.
- To make it dairy-free, swap buttermilk with almond milk plus a teaspoon of lemon juice.
- You can bake the batter in mini loaf pans; adjust baking time to 25–30 minutes.
- Store leftovers in an airtight container at room temperature for up to 3 days or freeze for up to 2 months.
