  • Crumb Topping:
  • 1/2 cup powdered sugar
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Mix the Wet Ingredients: In a large bowl, beat together the sugar, egg, and vanilla until smooth. Add the softened butter and beat until creamy. Mix in the mashed bananas and buttermilk.
  2. Whisk the Dry Ingredients: In a separate bowl, stir together the flour, salt, baking soda, baking powder, and cinnamon.
  3. Combine: Gently stir the dry mixture into the wet ingredients until just combined. Do not overmix.
  4. Prepare the Pan: Spray a loaf pan with non-stick spray. Pour in the batter, leaving 1 to 2 inches of space from the top.
  5. Make the Crumble: In a small bowl, mix powdered sugar, flour, cinnamon, salt, and melted butter. Crumble with your hands and sprinkle over the batter.
  6. Bake: Bake at 350°F (175°C) for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool and Slice: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and serve warm or at room temperature.
