Ingredients
– 1 pound ground beef
– 1 small sweet onion, diced
– 4 cloves garlic, minced
– 2 (10.5 oz) cans cream of celery soup
– 1 ½ cups beef stock
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon Italian seasoning
– 1 teaspoon paprika
– ½ teaspoon kosher salt
– ½ teaspoon black pepper
– 1 cup instant rice
– 12 oz frozen mixed vegetables
– 2 cups shredded sharp cheddar cheese
Instructions
1. Preheat Oven:
– Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish and set aside.
2. Cook Ground Beef:
– In a large skillet over medium heat, cook the ground beef until browned and crumbled. Drain excess grease if necessary.
– Add the diced onion and garlic, cooking until softened, about 3–4 minutes.
3. Prepare the Mixture:
– Stir in the cream of celery soup, beef stock, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper. Mix well.
4. Add Rice and Vegetables:
– Stir in the instant rice and frozen mixed vegetables. Cook for 2–3 minutes until well combined and slightly thickened.
5. Assemble the Casserole:
– Transfer the mixture to the prepared baking dish. Spread it evenly, then sprinkle the shredded cheddar cheese over the top.
6. Bake:
– Cover the dish with aluminum foil and bake for 20 minutes.
– Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
7. Serve:
– Let the casserole cool for a few minutes before serving. Enjoy!
