- 2 tablespoons (1oz/28g) butter (plus more for cooking)
Instructions
Step 1: Prepare the Potatoes
- Peel and chop your potatoes before weighing them for accuracy.
- Steam or boil the cubed potatoes in a medium pot until tender, about 20-25 minutes.
- Drain the potatoes and place them in a sieve over a bowl, letting them dry slightly for 5 minutes.
Step 2: Mash the Potatoes
- While still warm, press the potatoes through a sieve for a light and fluffy texture. Alternatively, use a potato ricer or masher if a sieve isn’t available.
Step 3: Form the Dough
- In a large bowl, mix the mashed potatoes with the flour, salt, pepper, and melted butter.
- Stir the mixture until it forms a soft dough ball.
Step 4: Shape the Farls
- Turn the dough onto a lightly floured surface and flatten it into an 8-inch round disc.
- Using a large knife, cut the disc into six equal triangular pieces.
Step 5: Cook the Farls
- Heat a large frying pan or skillet over medium heat and melt a generous knob of butter until bubbling.
- Carefully place the potato farls in the pan and cook for about 5 minutes on one side, or until golden brown.
- Flip the farls and cook for an additional 4-5 minutes until both sides are crisp and the interior is fluffy.
