Description

A delicious and easy recipe for Air Fryer Garlic Parmesan Chicken Skewers, perfect for a quick dinner.


Ingredients

  • 1 pound chicken breast
  • ¼ cup parmesan cheese, grated (divided into 2)
  • 3 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons mayonnaise
  • 1 tablespoon chili paste
  • ½ tablespoon smoked paprika
  • 1 teaspoon garlic granules
  • 1 teaspoon onion granules
  • 4 tablespoons unsalted butter
  • 1 teaspoon dried parsley
  • 1 tablespoon fresh parsley

Instructions

  1. Cut the chicken breast into similar bite-sized pieces about 1 inch cube and transfer to a bowl.
  2. To the chicken, add olive oil, mayonnaise, chili paste (if using), smoked paprika, garlic granules, onion granules, dried parsley, (1 part) parmesan cheese, salt and pepper. Mix well until well combined and each chicken cube is fully coated.
  3. Tread the chicken onto the skewers until the chicken is exhausted (you will need about 4-6 chicken on each skewer).
  4. Preheat your air fryer to 400F / 200C. Lightly spray the air fryer basket with cooking oil and arrange the skewers in a single layer. You may need to cook in batches if need be.
  5. Air fry the garlic chicken skewers for 8-10 minutes, flipping halfway through the cooking time, or until fully cooked, nicely charred, and no longer pink in the middle.
  6. In the meantime, make the garlic parmesan butter. Melt the butter in the microwave for 10 seconds (it is okay if it is not fully melted; that is what we are going for here).
  7. Add freshly chopped parsley, minced garlic, and the remaining parmesan cheese to the melted butter and whisk to combine.
  8. Once the chicken is fully cooked and reaches an internal temperature of 165F / 74C, generously brush the butter evenly on the skewers on all sides.
  9. Serve immediately and enjoy. I like to serve this garlic chicken parmesan skewers in wraps, over rice, or creamy mashed potatoes.
